Chef Vincenzo Guglielmi presented a blend of Italian antipasti with Egyptian mezzeh in an intensive hands-on cooking class. Anitpasti and mezzeh have become increasingly popular dishes. In this workshop Chef Vincenzo Guglielmi blended some well-known Italian ingredients and flavours with those found in Egyptian mezzeh. From these two rich traditions he produced new signature creations of antipasti dishes with amazing flavour combinations.

The classic caprese of buffalo mozzarella was served with babaghanough and roasted tomatoes, served with grenadine molasses, acidic enough to give the right twist. The famous Italian ravioli was turned into a taameya ravioli served with a sweet garlic mayonnaise and balsamic syrup on a bed of rucola.

While Egyptians usually prepare chicken liver paté with bell peppers, Chef Vincenzo prepared it the Tuscany style with anchovies and capers and served the roasted bell pepper salad on the side. The red grape caramel with this dish uplifted the chicken liver paté to new heights. Basterma often served in Egypt with eggs and white cheese was served baked and crispy with a ricotta cheese and a balady bread custard which contained Grana Padano and Romy cheese. The mint oil and sweet garlic and orange vinaigrette gave the right balance to the dairy products in this dish.
