Recipe WritingWell-written, standardized recipes are the base to any foodservice establishment’s success. They provide consistent quality and quantity and enable the chef to monitor efficiency and reduce costs by eliminating waste. This course will teach you through practical exercises and case studies how to write foolproof step-by-step recipes for a quality outcome.

Good recipes reduce costs by providing:

Learning objectives:

  • Understand the difference between a recipe and a “standardized” recipe
  • Write and read recipes with success
  • Identify the key elements to be included in any recipe
  • Convert measurement formats
  • Convert recipe yields, number of portions and portion sizes
  • Efficiency of using sub-recipes

Several case studies will illustrate common mistakes in recipe writing and how to avoid them. You will receive an ECA certificate upon successful completion of the exam.
