Cakes and GateauThis course is a two days hands-on workshop entitled Mousse Desserts & Chocolate Decorations.

Modern mousse gateaux are popular attractions in European pastry shops where clients can purchase futuristic, sleek and stylish desserts. This course will give Chefs a good base for those wishing to master the endless varieties of tastes and looks of mousse desserts.

Day 1 Mousse Desserts:

  • Mirror glaze
  • Fruit puree based mousse
  • Fruit custard based mousse
  • Dark, milk and white chocolate mousse
  • Pectin and gelatin fruit fillings
  • Sponges suitable for mousse desserts

Day 2 Assembling Mirror Glazed Mousse Desserts & Chocolate Decorations:

  • Technique of covering desserts with the mirror glaze
  • Variations of decorations
  • Moulding chocolate
  • Hand piped chocolate decorations: chocolate curls, ribbons, cigars, squares, chocolate decorations for the cake borders, chocolate flowers & leaves

Biographical Information about Chef Valentina

Chef Valentina Verbenko has had 4 years experience in the field of professional baking and pastry. She is a graduate of the Russian MBA-City Academy with an international degree as Master Pastry Chef (Level 6). She attended the Exclusive Culinary Academy (Moscow branch) & achieved Junior Master Pastry Chef (Level 5). She is qualified to manage an industrial pastry/bakery production line – management, recipe development, recipe implementation, hygiene and quality control.
