Japanese Master Class

Chefs gathered on the 5th of February for a Master Class in Japanese cooking. This class was held at the kind invitation of the Embassy of Japan in Cairo and the Japan External Trade Organization – JETRO. Among the chefs attending were many working in Asian and specialized Japanese cuisine restaurants. The cooking class was conducted by Eiji Hagimoto, the Chef of the Japanese Ambassador’s residence, and was kindly hosted by the Semiramis InterContinental Cairo.

The chefs learned how to make Strawberry Daifuku (strawberry wrapped in Mochi), Chawanmushi (steamed egg custard) and tempura. Daifukumochi, or Daifuku, is a Japanese confection consisting of a small round mochi stuffed with a sweet filling. Daifuku comes in many varieties. Mochi is Japanese rice cake made of mochigome, a short-grain japonica glutinous rice. The rice is pounded into paste and molded into the desired shape.
Due to its popularity special attention was given to the technique of making sushi. Chef Eiji Hagimoto showed how to make Futomaki-sushi (thick sushi roll), Uramaki-sushi (California roll) and Nigiri-sushi (sushi shrimp, tuna & salmon).The class was concluded with a tasting lunch so that all chefs could familiarize themselves with the authentic taste of Japanese cuisine.
