Mushrooms add a wonderful earthy flavour to savoury dishes. From ragouts, risottos, soups, salads and patés, mushrooms can be the star of the dish or provide a subtle accompaniment to a sauce or compound butter. They can be used cooked or raw in a wide variety of dishes. But whatever their use and function mushrooms are delicate and need special care in handling and cooking in order to preserve their texture and flavour. Chef Moustafa El Refaey will teach you how to do this and show you how to prepare a creative range of mushroom dishes.

  • Fried Stuffed Mushrooms with Herbed Cream cheese
  • Mushroom caps stuffed with Tuna cake Casserole
  • Stir fry mushrooms and summer vegetables
  • Mushroom & Sundried tomato Risotto

  • Grilled Crimini Mushrooms topped with spinach, beef medallion & Gorgonzola Cheese
