Description:

Candies and ConfectionsJoin Master Pastry Chef Valentina Verbenko for a hands-on workshop in Advanced Chocolate Mousse.

In this workshop you will learn the techniques of working with different types of chocolate while maintaining a quality outcome.

  • Introduction to working with chocolate.
  • Prerequisites of the mousse stability and the texture.
  • How cocoa solids content reflects on the final product.
  • French meringue based mousse calculations for various types of chocolate (milk, white, dark – with different percentages)
  • Pat A Bombe based mousse calculations for various types of chocolate (milk, white, dark – with different percentages)
  • Crème Anglaise based mousse calculations for various types of chocolate (milk, white, dark – with different percentages)
  • Ganache based mousse calculations for various types of chocolate (milk, white, dark – with different percentages)
  • Low calorie based mousse calculations for various types of chocolate (milk, white, dark – with different percentages)

Each participant will receive a table with recalculations for each chocolate type.

Biographical Information about Chef Valentina

Chef Valentina Verbenko has had 4 years experience in the field of professional baking and pastry. She is a graduate of the Russian MBA-City Academy with an international degree as Master Pastry Chef (Level 6). She attended the Exclusive Culinary Academy (Moscow branch) & achieved Junior Master Pastry Chef (Level 5). She is qualified to manage an industrial pastry/bakery production line – management, recipe development, recipe implementation, hygiene and quality control.
