Italian cuisine is popular worldwide. Like other cuisines of Mediterranean countries Italian cuisine is wholesome and healthy. However outside Italy this cuisine is often bastardized into comfort food laden with cheese, cream and other ingredients that do not belong to authentic Italian cuisine.
In this workshop participants will learn from Italian Chef Carlo Giovanni how to prepare Italian dishes as Italians prepare and eat them in Italy.

Biographical Information about Chef Carlo Giovanni

Carlo is an Italian Chef and F&B Manager. As CEO of Fortuna Group, a Food & Beverage consultancy firm, he oversees and manages all F&B and day-to-day operations within budget and to the highest standards for his clients thus ensuring excellent levels of internal and external customer service. Leading a F&B Team means attracting, recruiting, training and appraising talented personnel plus establishing targets, KPI’s, schedules, policies and procedures. Chef Carlo keeps tabs on food cost, waste and employee hours and optimizes profit for the company and creates the best dining experience possible for customers.

As consultant to any foodservice establishment Chef Carlo considers food handling and sanitation practices a top priority. He values a strong partnership with the front-of-house management team. He loves crunching numbers and controlling costs associated with running a profitable restaurant.

With his origins in Napoli, Chef Carlo has a passion for cooking and is an expert in teaching Italian cuisine. He is a dynamic executive Chef who enjoys coaching, mentoring and developing talent. Carlo has accumulated much experience from travelling and working in many countries. In Egypt Chef Carlo has collaborated in the opening of many restaurants including that of Lemon Tree Marassi, Lemon Tree Telal, Pepe Nero Korba and Napoletano.
