HACCP in the Kitchen
The handout “HACCP in the Kitchen” is based on the
SVH training and education program and written and adapted by
Mirjam van IJssel covers the seven stages of the HACCP with rules
and practical guidelines to ensure proper kitchen hygiene, as
well as an additional chapter on quality control.
