International Chef's Apprenticeship Program
Now in Egypt!
The International Chef's Apprenticeship Program is a high quality chef's training program
that meets the international standards of professional cookery and provides international
recognition and certification. The program enables chef trainees to meet professional challenges
with a systematic approach to quality and quantity of food production, as practiced today in
hotels, fine dining establishment, institutional catering facilities and other food service operations.
Program Objectives
- To raise the professional standards of culinary arts and food preparation in Egypt
for the betterment of the tourism industry.
- To implement official internationally recognized standards and certification
within the culinary profession in Egypt.
- To provide vocational basic kitchen skills training for industry chefs in accordance with the
international certification standards.
- To provide vocational basic kitchen skills training for young Egyptians who wish to start a
career as professional chef.
- To provide the food service industry with qualified chef's trainees.
- To enhance the work environment and career opportunities of the Egyptian chefs.
- To raise the image and reputation of the chef's profession in Egypt through education
and international certification. This will promote the chef's profession nationwide and will increase
the number of Egyptians seeking to start a career in the kitchen.
- To support the Egyptian Government's aim to have qualified and certified Egyptians employed in
the hospitality industry in accordance with international standards.
Study Location
The International Chefs Apprenticeship Program will take place at the newly established Culinary Training Centers in
Egypt located at Akhbar Al Youm Academy in 6th of October City (transport from Cairo will be available) and at the
Faculty of Tourism & Hotels Luxor, South Valley University. The training kitchens at the centers are equipped with
state-of-the-art modern kitchen equipment, hundred percent funded by the Ministry of Tourism.

Instructors
The International Chef's Apprenticeship Program will be conducted by Egyptian chefs, trained as professional
hospitality trainer by the Egyptian Tourism Federation and
trained as professional culinary instructor by the Egyptian Chefs Association in accordance with international
standards and accredited with international certifications.
Study Methodology & Approach
The International Chef's Apprenticeship Program will be one third theoretical and two thirds practical, hands-on skills
training in food preparation. The theoretical modules run parallel to the practical classes.
The training will be conducted in Arabic to ensure full comprehension of the subject, however, the student
manuals will be presented bilingual English and Arabic to improve English language skills, both in general English
and in culinary terminology directly related to the student's profession.

Students can enroll on full-time study basis or part-time study basis. Young
Egyptians who wish to start a career as chef
can also study on part-time basis with a request for placement in the industry as chef trainee.
Study methods available are as follows:
- Full-time study, 5 days a week, duration six months
- Part-time study, 2 days a week, duration one year
- Block study, 2 months full-time and for 5 months 10 days a month, duration one year
Employment of Chef's Apprentices
A great opportunity for hotels, fine food establishments, institutional catering facilities and other food service operations
to educate and certify their chefs against affordable fees!
Enrolling industry chefs into the International Chef's Apprenticeship Program will give the chance to hire
young chef trainees studying at the Culinary Training Centers. This will
assist in reducing shortage in kitchen staff.
Simultaneously, the Ministry of Tourism is subsidizing
the tuition fees of the unemployed young potentials who wish to learn a skill and whom the establishments
can hire as chef's trainees.
Certification
Upon completion of the program final examination will be theoretical and practical to obtain international
certification as a Certified Trainee Chef for students who do not have previous work experience and as
a Certified Chef for students with a minimum of one year work experience. The International Chefs Apprenticeship
Program also provides
the stepping stone to further studies towards international qualifications as executive chef or in specialized culinary fields.
Student Enrollments & Application
The International Chef's Apprenticeship Program will take place on a continuous basis.
Application forms for the first semester should be submitted before 28 April. Reduced
study fees are available for first term student enrollments.
Program Fees
Enhanced course fee funding is available due to the subsidy of the Ministry of Tourism.
After subsidy, the reduced tuition fee per student for the complete
International Chefs Apprenticeship Program is:
Industry Workforce (establishments) Discounted Rates
- LE 7,500 LE 4500 for non-ECA Members
- LE 6,750 LE 4050 for ECA Members
Individual Applicants
LE 1,500 for non-ECA Members
LE 1,350 for ECA Members
Above mentioned fees include tuition, study materials bilingual English and Arabic, ingredients, clothing,
transport (from Cairo to 6th of October city), administration (medical insurance), examination and international
certification.

Organizations Involved
The Culinary Training Centers of Egypt project is financially funded by the Ministry of Tourism, and managed
by the Egyptian Tourism Federation (ETF) with the technical assistance of the Egyptian
Chefs Association (ECA) and Technical and Vocational Education Training (TVET).
The International Chefs
Apprenticeship Program has been developed by the Egyptian Chefs Association, already renowned for its quality
kitchen training programs.
The joined efforts of all parties involved provide a "Win Win" situation for the hotel and tourism sector and the chefs of
Egypt in raising the standards of the foods served to the tourists visiting the country, which will increase the
popularity of Egypt as a prime tourist destination worldwide.
CSR and Donor Opportunities
The Ministry of Tourism subsidizes 100% the State of the Art Kitchen settings and 70% of the student fees. The remaining 30% of the tuition fees will be acquired 20% by private sector companies and private donors and 10% will be paid by the students themselves.
Private sector companies can be actively involved in the Culinary Training Centers project with their Corporate Social Responsibility (CSR) departments by supporting young Egyptians to learn the skills of professional cooking, a stepping stone to a promising international career without borders!
Also private donors are welcome to financially support the tuition fees of the unemployed and so helping a young Egyptian to learn a specialized skill and be secured of future employment in the fast growing tourism and catering industry.
