The Egyptian Chefs Association is organizing a series of workshops scheduled to take place in conjunction with the Host Sharm Salon Culinaire'07 at the Savoy Hotel Sharm as follows:

International Culinary Trends - Monday 19 February

This four-hours lecture will provide attendees with a good insight into the evolution of culinary arts; starting as far back in history as the time of the discovery of the effects of fire on the taste of meat, highlighting the main culinary developments throughout the centuries until the popular culinary trends of today.

Professional Buffet Setting - Thursday 22 February

This full day workshop will provide attendees with knowledge on Types & Theme Buffets / Buffet Design & Decoration / Presentation of Food Items / Temperature Control & Hygiene / Innovative Live Cooking Stations & Portion Control / Menu Planning & Menu Cycles / Budgeting & Food Cost Allocation per Guest.

Teaching will be conducted in English by expert ECA instructors. Handout materials and test will be available in English and Arabic. The training will be concluded with a short test. Participants will receive certificate with ECA logo upon successful completion of the test.

Essentials of Food Costing - Tuesday 20 & Wednesday 21 February

The 2-day intensive training workshop is addressed to those working in food operations on supervisory level in charge of food preparation, and quality and cost control, who need a broad basic understanding of food costing & food cost control such as executive chefs, f & b managers, food cost controllers and restaurant owners.

The structure of the workshop forms a logical set-up, which will cover the following topics:
  • Standardized Recipes the Bases for Food Costing
  • Menu Item Forecasting
  • Inventory Control
  • Purchasing
  • Receiving
  • Storage
  • Determining Actual Food Expense
The 2-day workshop will be held on 20 & 21 February. Participants will receive a certification with ECA logo upon completing the exam successfully. The workshop will be conducted in English. However, handout materials and test are available in English and Arabic.
