ECA Training Coverage

The Egyptian Chefs Association (ECA) organized a two-day workshop on Kitchen Management on 20–21 January at the Cairo World Trade Center Hotel. The workshop was led by Chef Mohamed Nosseir, ECA Culinary Instructor, and brought together culinary professionals looking to strengthen their management skills and improve kitchen performance.
The workshop focused on the core principles of effective kitchen management, highlighting the role of leadership, organization, and strategic planning in today’s professional kitchens. Participants explored how kitchen management goes beyond cooking, covering everything from cost control and menu design to communication and food safety.

One of the key topics discussed was food cost control, where attendees learned how to track ingredient costs, reduce waste, and improve profitability without compromising quality. Inventory control was also addressed, with practical guidance on managing stock efficiently and avoiding losses caused by poor storage or over-ordering.
Menu engineering and menu planning formed a major part of the workshop. Participants examined how to design menus that are both appealing to guests and financially sustainable for businesses. The sessions also emphasized food sustainability and food waste reduction, encouraging chefs to adopt smarter practices that benefit both operations and the environment.
Leadership skills and kitchen ethics were highlighted as essential elements of successful kitchen management. The workshop covered effective communication techniques, helping kitchen leaders improve teamwork, handle challenges, and build stronger relationships with staff, suppliers, and customers. Another important focus was establishing and maintaining a productive workforce, with discussions on motivation, responsibility, and professional behavior in the kitchen.

Food safety was addressed through a detailed session on HACCP in the kitchen, explaining its importance and why strict standards are critical for protecting both customers and businesses.
The Kitchen Management Workshop provided participants with practical knowledge, real-world insights, and valuable tools to enhance their management capabilities. Through this initiative, the Egyptian Chefs Association continues to support the professional development of chefs and contribute to raising standards across the culinary industry in Egypt.
