Building Safer Kitchens: ECA and TÜV NORD Egypt Lead HACCP Training Initiative

ECA Training Coverage

The Egyptian Chefs Association, in strategic collaboration with TÜV NORD Egypt, recently held a comprehensive 2-day training course on HACCP (Hazard Analysis and Critical Control Points), aimed at empowering food professionals with the tools and knowledge needed to uphold global food safety standards.

This intermediate-level program attracted culinary professionals, food safety officers, and kitchen managers who are serious about implementing internationally recognized food handling and preparation protocols.

A Practical, Standards-Based Curriculum

The training was designed to bridge the gap between theoretical knowledge and real-world application, walking participants through the entire HACCP framework with practical examples and expert-led sessions.

Key Topics Included:

  • Introduction to Food Safety
  • Contamination: Types and Associated Risks
  • Foodborne Diseases: Causes and Prevention Methods
  • Personal Hygiene Standards and Implementation
  • Food Hazards and Control Measures (from Receiving to Serving)
  • Facility Design and Layout for Enhanced Safety
  • Cleaning and Disinfection Best Practices
  • Pest Management and Prevention Strategies
  • HACCP System Overview and Step-by-Step Application

The course took a deep dive into the core elements of the HACCP system, focusing on the five preliminary steps and the seven principles—critical to establishing and maintaining a robust food safety management system.

Participants Learned How to:

  1. Conduct a hazard analysis and identify both biological, chemical, and physical hazards.
  2. Determine Critical Control Points (CCPs) in food production.
  3. Define and validate critical limits for each CCP.
  4. Establish effective monitoring systems.

  7. Maintain thorough documentation and record-keeping systems.
