The Egyptian Chefs Association (ECA) recently organized a specialized workshop focused on European pastry, continuing its mission to support culinary education and professional development within the hospitality sector.

The workshop was led by Chef Mahmoud Genedy, ECA Culinary Instructor, who shared his expertise in classic and modern European dessert techniques. The training was hosted by Nahdet Misr School for Applied Technology, providing an ideal learning environment equipped for hands-on culinary practice.

Throughout the session, participants were introduced to a diverse menu that combined traditional European desserts with contemporary presentations. Chef Genedy demonstrated each recipe step by step, highlighting key techniques, ingredient selection, and finishing details essential for professional pastry kitchens.

The workshop menu included:

  • Tiramisu
  • Pistachio mousse with Lotus crumble
  • Orange and strawberry panna cotta
  • Chocolate and vanilla mousse with crispy feuilletine
  • Greek walnut pie (Karidopita) served with vanilla ice cream
  • Chocolate fondant served with vanilla ice cream

Attendees had the opportunity to observe professional methods, ask questions, and gain practical insights into texture balance, flavor pairing, and plating. The workshop emphasized precision, consistency, and creativity, all of which are critical skills for pastry chefs working in hotels, restaurants, and bakeries.
