Classic Catering, Alexandria, is seeking an experienced Chef de Partie Hot Kitchen to join their team.

Responsibilities:

• Preparation & Cooking: Prepare and cook various hot food items (meats, poultry, main courses, and sauces) according to approved recipes and specifications.
• Station Supervision: Oversee the hot kitchen production line, ensuring a smooth and efficient workflow.
• Hygiene Standards: Ensure strict compliance with personal hygiene and workplace cleanliness standards (HACCP).
• Staff Mentorship: Assist in training and guiding assistant kitchen staff within the department.
• Menu Development: Contribute to recipe development and suggest new dish ideas aligned with the brand’s product nature.
• Inventory Management: Monitor the shelf life and stock levels of raw materials, reporting any shortages to the supervisor.
• Safety Compliance: Adhere to occupational health and safety instructions while operating equipment and ovens.

Qualifications Required

• Experience: A minimum of 7 years of experience in hotel kitchens or large-scale restaurants.
• Education: A degree in Culinary Arts or equivalent (an added advantage).
• Mass Production: Proficiency in high-volume cooking and large-batch production.
• Food Safety: Strong knowledge of food safety, storage, and preservation standards.
• Resilience: Ability to work under pressure for extended hours.
• Physical Fitness: High physical stamina and the ability to work in a high-temperature kitchen environment.
• Menu Planning: Familiarity with menu engineering and food cost control (waste reduction).
• Equipment Mastery: Experience operating industrial ovens, commercial deep fryers, and heavy-duty mixers.
